Mexican Breakfast Tortilla Wrap with Eggs and Feta Recipe

This Mexican breakfast tortilla wrap is a tasty and filling way to start the day. The scrambled eggs are seasoned with salt and pepper before being mixed with creamy feta cheese, ripe avocado, and zesty salsa. This breakfast is filling and flavorful when wrapped in a warm flour tortilla.

Instructions

  • In a mixing bowl, combine the eggs, salt, and pepper.
  • In a large nonstick skillet over medium-high heat, heat the olive oil.
  • Scramble the eggs in the skillet for 3-5 minutes, or until cooked through.
  • Microwave the tortillas for about 15-20 seconds.
  • Top each tortilla with a quarter of the scrambled eggs, feta cheese, avocado, and salsa.
  • Fold the tortilla in half and roll it up tightly to enclose the filling.
  • Continue with the remaining tortillas and ingredients.
  • Serve right away.
