Instructions

  • Combine the cooked brown rice, black beans, salsa, cilantro, cumin, and chili powder in a large mixing bowl.
  • Place a whole wheat tortilla on a plate and spoon a quarter of the mixture into the center.
  • Add diced avocado and shredded cheddar cheese on top.
  • Fold the tortilla's sides over the filling, then roll up tightly to form a burrito.
  • Continue with the remaining tortillas and filling.
  • Melt butter in a large skillet over medium-high heat.
  • Cook the burritos in the skillet, seam-side down, for 2-3 minutes on each side, or until golden brown and heated through.
  • Serve right away.
