  • Prep Time: 20 minutes
  • Total Time: 20 minutes

Instructions

  • Fill a large mixing bowl halfway with warm water.
  • Dip a rice paper wrapper in water for a few seconds to soften it.
  • Place the rice paper wrapper flat on a surface.
  • Fill the center of the rice paper wrapper with a small handful of carrot and cucumber.
  • Top with avocado slices, mint leaves, cilantro leaves, and chopped peanuts.
  • Fold the rice paper wrapper's sides over the filling, then tightly roll up from the bottom to form a wrap.
  • Continue with the rest of the rice paper wrappers and filling ingredients.
  • Serve immediately or refrigerate for up to 2 hours.
