Shrimp Spring Rolls with Rice Paper Wraps Recipe

These shrimp spring rolls are a light and refreshing appetizer or meal. The combination of shrimp, noodles, and fresh herbs is ideal for a hot day or whenever you want something light and refreshing.

Ingredients

Time Needed

  • Prep Time: 30 minutes
  • Cook Time: 5 minutes
  • Total Time: 35 minutes

Instructions

  • Fill a large mixing bowl halfway with warm water.
  • Dip one rice paper wrapper in water for a few seconds to soften.
  • Place the wrapper face down on a clean surface.
  • Line up 2 shrimp halves down the center of the wrapper.
  • Add a few noodles, lettuce, bean sprouts, mint, cilantro, and basil to taste.
  • Fold the wrapper bottom up over the filling.
  • Fold the wrapper's sides in, then roll it up tightly.
  • Rep with the rest of the wrappers and ingredients.
  • To make a dipping sauce, combine the hoisin sauce and water in a small bowl.
  • Serve the spring rolls with the dipping sauce on the side.
